Key Ingredients for the Best Summer Tomato Salad

A few notes about selecting and preparing the essential ingredients to ensure your salad is nothing short of spectacular:

Cherry Tomatoes: The Star of the Show

Cherry Tomatoes are the heart and soul of this salad. I’ve specifically used heirloom cherry tomatoes here, which are absolutely fabulous if you can get your hands on them. Their diverse colors – from deep reds and oranges to sunny yellows and even purples – and varied, often sweeter, flavor profiles add both beauty and depth to the dish. If heirloom varieties aren’t available, don’t fret! The market offers a wide variety of cherry and grape tomatoes these days, all of which will work wonderfully. I find that a mix of multi-coloured cherry tomatoes is especially pretty in this fresh tomato recipe, making it as appealing to the eye as it is to the palate. Look for firm, plump tomatoes with taut skin, free from blemishes.

Bread for the Perfect Garlic Croutons

For the essential crunch, nothing beats homemade croutons. I believe a good quality baguette makes particularly great croutons due to its sturdy texture and ability to crisp up beautifully. However, in a pinch, any day-old rustic bread, such as sourdough or ciabatta, will work splendidly. The key is to use bread that is slightly firm, allowing it to absorb the garlic butter and become wonderfully golden and crunchy when toasted.

Creative Variations & Flavor Enhancements

One of the joys of this simple salad recipe is its versatility. You can easily adapt this tomato salad with a few simple additions to create different flavor profiles and textures. Here are some fantastic ways to change things up:

  • Add Cheese: Elevate the creaminess and tang by adding crumbled feta or goat cheese. For a saltier, umami boost, consider some delicate Parmesan shavings or small mozzarella balls.
  • Swap the Vinegar: Another excellent way to introduce a different nuance of flavor is to swap the red wine vinegar in the dressing for balsamic vinegar. Balsamic will lend a sweeter, richer depth to your vinaigrette, creating another great flavor combination that pairs beautifully with the tomatoes.
  • Fresh Herbs: Beyond basil, consider adding chopped fresh parsley, mint, or even a touch of dill for an extra layer of herbaceousness.
  • Additional Vegetables: Enhance the crunch and nutrition by incorporating thinly sliced cucumbers, diced bell peppers (red or yellow work well), or even some kernels of fresh corn cut right off the cob.
  • Protein Boost: For a more substantial meal, grill some chicken or shrimp and slice it into bite-sized pieces to add to the salad. Chickpeas or cannellini beans can also provide a delicious vegetarian protein source.
  • Nutty Crunch: Toasted pine nuts or slivered almonds can add another layer of texture and nutty flavor.

Expert Tips for the Ultimate Cherry Tomato Salad

  • Choose Peak Season Tomatoes: The success of this salad largely depends on the quality of your tomatoes. Use them when they are fully ripe, sweet, and bursting with flavor. Farmers’ markets are your best friend here!
  • Don’t Overdress: The goal of the vinaigrette is to enhance, not overpower, the natural flavors of the tomatoes. Start with a conservative amount and add more if needed. The croutons will also absorb some of the dressing.
  • Serve Immediately: For the best texture, especially concerning the croutons, assemble and serve the salad right away. This ensures the croutons remain crispy.
  • Make Croutons Ahead: The homemade garlic croutons can be prepared a day or two in advance and stored in an airtight container at room temperature. This saves time on assembly day.
  • Garlic Butter Method: Don’t rush the garlic butter. Cooking the garlic slowly over low heat in butter helps to mellow its pungency and infuse the butter with a deep, sweet garlic flavor without burning it.
  • Broiling Caution: Keep a close eye on the baguette slices while broiling. They can go from perfectly golden to burnt in a matter of seconds.

Total Time: 30 mins
Yield: 3 servings

Ingredients

Garlic Croutons:

  • 1/2 head garlic, about 3-4 cloves peeled
  • 1/4 cup unsalted butter
  • 1/2 cup freshly grated Parmesan
  • 1 teaspoon chopped fresh oregano, or 1/4 tsp dried oregano leaves
  • 1/4 teaspoon crushed red pepper flakes
  • Pinch salt and freshly ground pepper
  • 1/2 baguette

Salad Dressing:

  • 3 Tablespoons olive oil
  • 2 teaspoons red wine vinegar
  • Salt and freshly ground pepper

For the salad:

  • 3 cups Cherry tomatoes, halved
  • 1/4 red onion, thinly sliced
  • 6 fresh basil leaves, chopped
  • Salt and freshly ground pepper

Instructions

  1. For the Homemade Garlic Croutons: Melt butter in a small saucepan over LOW heat. Add garlic cloves. Cover saucepan and cook, stirring and checking regularly, for 10-15 minutes. Watch closely and don’t raise heat above low, or garlic and/or butter may burn. Transfer garlic (and any butter) to a medium bowl and let cool completely.

  2. Once garlic has cooled, add Parmesan, oregano, and red pepper flakes. Mash to a paste and season with a little salt and freshly ground pepper.

  3. Preheat your oven broiler with rack about 6-8 inches from heat. Line a baking sheet with aluminum foil. Slice the 1/2 baguette in half lengthwise. Place two baguette pieces on baking sheet and broil, cut side down, until golden brown, about 1-2 minutes (watch carefully). Remove from oven, let cool slightly, then flip over and spread cut side with garlic paste. Broil until cheese is golden and bubbling, about 2 minutes. Cut one of the baguette slices into bite-sized cubes. Set aside.

  4. For the salad: In a large bowl, combine the halved cherry tomatoes, red onion slices and chopped basil. Season with a bit of salt and pepper. Whisk together the salad dressing ingredients in a small bowl. Drizzle over tomato mixture and toss to combine. Add only enough to moisten. Add some of the garlic bread cubes. Toss to combine. Serve immediately.

Notes

You’ll have more garlic croutons than you need for one salad. Wrap and refrigerate any extra to use for another salad later, or enjoy them as a delicious snack!

Make Ahead and Storage Guidelines

This healthy salad recipe is best enjoyed fresh, especially when the croutons are still wonderfully crisp. However, you can certainly prepare components in advance to make assembly a breeze:

  • Garlic Croutons: Prepare the garlic croutons a day or two ahead. Once completely cooled, store them in an airtight container at room temperature. Avoid refrigerating, as this can make them soft.
  • Salad Dressing: The red wine vinaigrette can be whisked together up to 3 days in advance and stored in a sealed jar in the refrigerator. Give it a good shake before drizzling over the salad.
  • Chopped Ingredients: Halve the cherry tomatoes and slice the red onion a few hours before serving. Store them separately in the refrigerator. Chop the fresh basil just before assembly to prevent browning.

For optimal freshness and texture, combine the tomatoes, onion, basil, dressing, and croutons just before you plan to serve. This ensures that the tomatoes remain firm, the basil stays vibrant, and the croutons maintain their delightful crunch, providing the ultimate summer salad experience.
